Grape: Carmenère
Origin: Chile
Description: For over a century,
Chiles Carmenère vines were mistaken for Merlot.
Then one day someone noticed some tell-tale white
markings and blew its cover. Phased out long ago
in Bordeaux, Carmenère thrived in Chiles drier
climate to become their signature red. Look for
dark plums and spice, plus dusty sage. Casillero
del Diablo means the devils cellar, a rumor
planted by the Concha y Toro people 100 years
ago to scare away burglars and nosy neighbors.
Food pairing: Deli sandwiches! Compliments
smoky-salty cold cuts like pastrami, as well as
sharp, nutty cheese.
